Cream of blue cheese Valdeón made in the heart of the Picos de Europa - Asturias
It is a blue cheese, made all year long with cow's milk or goat's milk or the mixture of both. Long maturation, until reaching the point between semi-cured and cured. It presents / displays a rough and irregular crust, of dark gray tones and with small red and blue spots. The paste has soft texture and pale yellow color, full of small cavities where a white and blue-green mold is concentrated.
Its flavor is strong, somewhat spicy, fatty and buttery to the palate, it is very aromatic. It is recommended to use it for spreading and is perfect to prepare any variant of blue cheese sauce.
