With its typical crater shape, the Tronchon is easy to identify.
It is produced in the village of the same name, in the province of Teruel, near Zaragoza.
The origin of its form is mysterious, traditionally this form has been used for generations.
The Tronchon is made from mixed milk. Mainly goat and sheep milk, with a smaller portion of cow's milk. The young cheese has a springy, slightly squeaking texture and is mild, with a slightly sour taste. The cheese has no bark and is suitable for melting or slicing.
When the cheese matured, its aromas intensify and the texture becomes denser, but still retains its moisture. Combined with other types of Spanish cheese, such as the Monte Enebro, it is an excellent table cheese and has inspired Don Quijote poetically!
