Valdeón is a blue cheese, known as the Asturian Roquefort, as it is said that this French cheese was the inspiration for its maker in 1986.

Very fine blue cheese made using traditional methods with milk from cows and goats in the Valdeón Valley in the northwest area of the Castilla y Leon region.
Matured in natural limestone caves, this semi-cured to cured cheese has a sticky natural rind that is wrapped in sycamore leaves. The paste is closed with a soft texture with blue-green mould. It has a strong, persistent flavour and is aromatic and buttery on the palate with acid and saline touches. Very creamy, with a pleasant long lasting flavor.
STORAGE AND CONSUMPTION:
Keep in a dark, cool, dry, ventilated place so that it does not dry out. If it is kept in the refrigerator, it should be taken out an hour before consuming.
