The Iberian field fed ham is traditionally produced, from the choice of the best Iberian pigs to the 30 month drying process, beginning with salting and finishing with the hams being hung in bodegas where they attain all the characteristics that make it one of the best known Spanish gastronomic products.
Our field fed hams weigh around 8 kg, which we consider to be the optimum weight for an Iberian ham.
It is produced from semi-free range Iberian pigs raised in our Salamantinas farm. The pigs forage freely in the meadows and their diet is complemented by natural meal under our control. The daily physical exercise needed to feed themselves means that these animals have just the right amount of fat in their meat, which gives our acorn fed hams an exquisite flavour.
There is no need for refrigeration or any special storage conditions. Once the vacuum seal has been broken we recommend that the ham is removed from its bag and kept covered in cling film.
