Torta del Casar is a Spanish cheese with a European DOP according to Regulation (EC) 1491/2003 of the European Commission.
There are only 6 cheese makers in the world producing this cheese.
It is one of the most important cheeses of Extremadura, an area in Spain well known for its shepherding and seasonal livestock migrations. The routes are regulated by the Mesta laws of 1273. A Royal Privilege granted by King Sancho IV gave the village of Casar the surrounding land so that its flocks could graze freely.
STORAGE AND CONSUMPTION:
The usual method is cut the top off the rind (which can be used as a lid), spread the creamy centre on hot bread and accompany it with a good red wine.
It is better not to keep it in the fridge; a not too warm cupboard is the ideal place to store Torta del Casar. If this is not posible it can be kept in the fridge and taken out some time before eating to bring it to room temperature.
